Chinese tourists really love Bali’s various unique and authentic flavors. Some of the Balinese delicacies that are very popular among Chinese tourists include:
1. Sate Lilit
Made of minced meat, usually fish or chicken, mixed with coconut and spices, skewered and grilled to perfection.
Usually made from minced meat, it is a popular dish. The process of making satay begins after the meat or fish is minced and mixed with spices. Take a lemongrass or bamboo skewer and wrap the seasoned meat or fish around it, forming a meat roll entwined with the aroma of lemongrass. This technique gave the dish its name "lilit".
Once prepared, the lilit is usually grilled over an open flame or coconut shell charcoal, giving it a unique flavor and charming aroma. It is usually served with steamed white rice, spicy matar sauce (a typical Balinese sauce made from shallots, chili peppers, garlic, tomatoes and lime juice), and sometimes pickled cucumbers or fresh vegetables as a side dish. This dish provides an authentic culinary experience from Bali and is a popular choice for Chinese tourists to try local cuisine.
2. Nasi Campur Bali
A plate of steamed rice is served with a variety of side dishes such as grilled chicken, crispy fried soybean cakes, chili sauce and vegetable dishes.
It is an Indonesian dish consisting of a spoonful of white rice with various small side dishes such as spiced chicken (ayam betutu), satay (sate), steamed chicken in banana leaves (tum ayam), Balinese salad (lawar), sambal matah, etc. This dish combines different tastes and textures. The taste of Balinese rice reflects the local characteristics. In addition, the special Balinese spice blend is used as the base ingredient and cooked in the traditional way, which enhances its unique flavor and aroma.
3. Spiced smoked chicken (Ayam Betutu)
Rakshaw is a chicken dish cooked with Balinese spices and wrapped in banana leaves and then grilled or boiled. Rakshaw is one of the famous traditional dishes of Bali and is known for its spicy and delicious taste.
Interestingly, not only does rendang take hours to cook, Rakshaw also takes about 3-4 hours to prepare. To make grilled Rakshaw, the chicken and spices are wrapped in banana leaves and then grilled over an open flame or charcoal. This grilling process gives the Rakshaw its unique aroma and enriches its flavor. In contrast, boiling Rakshaw, the chicken and spices are placed in a pot and simmered for quite a long time until the meat becomes tender and the spices penetrate it.
4. Lawar
Lawar is a traditional Balinese salad made from a mixture of finely chopped vegetables, shredded coconut, spices, and usually minced meat or diced chicken.
Lawar is a traditional Balinese dish made from finely chopped vegetables or meat mixed with Balinese unique spices. It has many variations such as chicken salad (lawar ayam), pork salad (lawar babi) and bean salad (lawar kacang).
The use of aromatic spices in the salad is essential to creating its unique flavor. It is usually eaten fresh and cold, allowing the flavors to blend together. The dish presents a variety of flavors, combining savory, spicy and refreshing elements. The strong spices stimulate the taste buds, while the tender vegetables provide a soft texture. Traditionally, Balinese salad is often served as a side dish for religious ceremonies or special events. However, salads can now be found in restaurants and small stalls in Bali, making it one of the favorite culinary choices for Chinese tourists visiting the island.
5. Babi Guling
This dish features juicy roast suckling pig with crispy skin and tender meat and a rich and fragrant seasoning.
Babi Guling is one of Bali's iconic dishes. It requires a whole roasted pig and is cooked with Balinese spices in a time-consuming and technically demanding process. Before roasting, the pork is stuffed with a spice mix that includes garlic, shallots, ginger, galangal, lemongrass, wintersweet, and other herbs and spices. These spices give the pork its unique aroma and flavor.
The seasoned pork is skewered on bamboo poles and roasted over a wood-fired stove for hours. This roasting process makes the skin crispy while maintaining the tenderness of the meat and the flavor of the spices. During the roasting process, the pork is constantly rotated and brushed with a special spice mix and lard to maintain its crispy and golden skin. This process creates a layer of crispy skin that has become the hallmark of the roasted suckling pig.
